  3. you know the heat is right when the butter melts, but does not burn
  4. fold those eggs in and continuously agitate so the eggs cook uniformly
  5. if you are feeling fancy toss that omelet
  6. add more butter and start to fold the omelet
  7. add salt and chives to taste
